Perfect Pecan Pie

Ingredients

Pie Crust

  • 1 1/4 cups all-purpose flour

  • 1/2 tsp salt

  • 1/2 Tbsp sugar

  • 1/2 cup cold butter, cut into cubes

  • 3-4 Tbsp ice water


Filling

  • 1 ¼ cup white sugar

  • 1/2 tsp salt

  • 1 cup dark corn syrup

  • 3/4 tsp vanilla extract

  • 1/3 cup melted butter

  • 3 eggs, beaten

  • 1 cup chopped pecans



Directions


For the Crust

1. Combine flour, salt, and sugar in a bowl.

2. Add cold butter cubes and mix until the mixture resembles coarse crumbs.

3. Gradually add ice water, 1 tablespoon at a time, until a smooth ball of dough forms.

4. Roll the dough on parchment paper into a 12-13 inch circle.

5. Flip the dough (dough-side down) into a pie dish, and remove the parchment paper. Set aside.


For the Filling

1. Preheat the oven to 350°F (175°C).

2. In a bowl, mix white sugar, brown sugar, salt, corn syrup, vanilla, melted butter, and beaten eggs.

3. Spread the chopped pecans evenly at the bottom of the unbaked pie crust.

4. Pour the syrup mixture over the top.

5. Cover the pie lightly with foil and bake for 30 minutes.

6. Remove the foil and bake for an additional 20 minutes, ensuring the crust and pecans do not burn.

7. Let the pie cool before serving.
