Ingredients:
3 eggs
2 cups sugar
1 tsp vanilla
2 cups flour
1 heaping tsp baking powder
Dash of salt
2 sticks of butter
1 cup milk
Directions:
Prepare Wet Ingredients: Beat 3 eggs in a bowl, then add 2 cups of sugar and 1 tsp of vanilla or lemon flavoring. Beat the mixture until creamy.
Sift Dry Ingredients: Sift 2 cups of flour, 1 heaping tsp of baking powder, and a dash of salt together.
Melt Butter and Heat Milk: Melt 2 sticks of butter then add 1 cup of cold milk to cool the mixture.
Combine Ingredients: Add the cooled milk and butter mixture to the sifted dry ingredients, then, gently mix in the egg and sugar mixture, but don't overbeat.
Bake: For a tube pan: Bake in a greased and floured pan at 350°F for 50 minutes or at 375°F for 30 minutes. For a sheet cake: Bake at 325°F for 60 minutes.
Who is Noni?
Noni is my Wife Emilia's grandmother. She has been making this cake for decades and this recipe is legendary in her family. I've never quite mastered the recipe as well as Noni or her daughter (my mother-in-law) Nona. But I get better each time I make it.
