Lemon Balm Pesto:


Lemon balm pesto is a fun twist on your classic basil pesto. Lemon balm is a fast spreading weed that is part of the mint family. So, if you have any in your yard at all, there is a good chance you have a lot of it. What better way to de-weed the garden than to make a delicious pesto for your pasta night?




If you don't have any in your yard or garden, I would start by asking around your with your neighbors. You would be surprised what people have and are willing to give if you just take the time to ask. My mother-in-law, Nona, gives this tuff out by the bag-fulls every year to her neighbors. If you still can't find some, try looking in your local farmers market, or do a quick google search. I have also been able to find most things I need by using local facebook groups. It could be worth looking in a local greenhouse or plant nursery as well.


If you decide to plant some of this in your garden, be warned... it will spread.


Lemon Blam Pesto:

Ingredients:

  • 3/4 cup lemon balm leaves (washed and tightly packed)

  • 1/2 cup walnuts or nut of your choice

  • 3/4 cup fresh grated parmesan cheese (shaky cheese works too)

  • 1/4 cup olive oil

  • Zest from 1 whole lemon

  • Juice from 1 whole lemon

Directions:

  1. Put all of the ingredients into a food processor. Pulse until you get your desired texture.
