Easy Buttermilk Biscuits

Ingredients:

  • 2 cups all purpose flour (250g)

  • 1 Tbs baking powder

  • 1 tsp salt

  • 8 Tbs butter (1 stick), cold, grated or cut into small cubes. 6 Tbs used in biscuits, 2 Tbs set aside to brush biscuits after baking.

  • 3/4 cup buttermilk (or milk with 1 tbs vinegar)


Directions:

  1. Preheat oven to 425°F

  2. In a large bowl, mix the flour, baking powder, and salt.

  3. Cube or grate 6 Tbs butter directly into the flour mixture. Set aside the remaining 2 Tbs of butter.

  4. Mix the butter into the flour until the contents become slightly crumbly.

  5. Pour in the buttermilk, then mix and form a ball.

  6. Dump the ball onto a lightly floured counter and press everything down. Fold the dough in half and rotate it 90 degrees. Press it down, fold it in half again, and rotate it again. Do this 4-6 times. This step adds layers to the biscuits and makes then flaky.

  7. Shape the dough into a flat square, roughly 9 inches by 9 inches, and about 1/2 inch thick. Then cut the dough into 9 smaller squares.

  8. Then move the biscuits to the baking sheet and bake in the pre-heated oven for 8-10 minutes, or until the top is golden brown.

  9. While the biscuits are baking, melt the 2 Tbs butter, then when biscuit are done brush or drizzle the butter over the biscuits.

  10. Eat the biscuits! This step is crucial, don't forget it.
