Ingredients:

  • 2 1/4 cups all-purpose flour (2 1/2 cups for high altitude)

  • 1 tsp baking soda (3/4 tsp for high altitude)

  • 1 tsp salt

  • 1 cup unsalted butter, softened (or ghee)

  • 1 1/2 cup packed brown sugar (1 1/3 cups for high altitude)

  • 1 tsp vanilla extract

  • 2 large eggs

  • 2 cups semi-sweet chocolate chips

  • (add 2 tsp water for high altitude)

Instructions:

  • Preheat your oven to 375°F (190°C).

  • In a small bowl, combine the flour, baking soda, and salt.

  • Next add the softened butter, brown sugar, eggs, and vanilla extract. Mix until creamy.

  • Stir in the chocolate chips.

  • Drop rounded tablespoons of dough onto un-greased baking sheets or parchment paper.

  • Bake in the preheated oven for 8-10 minutes until the edges are golden brown.

  • Cool on the baking sheets for 2 minutes, then transfer to wire racks to cool completely.

Tips for High-Altitude Baking:

  • At higher altitudes, lower air pressure and drier air can affect baking. Adjustments are necessary to achieve the perfect bake.

  • Increase oven temperature and/or baking time to ensure thorough baking.

  • Decrease leavening agents like baking soda to prevent over-puffing.

  • Add a bit more flour to help with structure.

Another helpful tip:

  • If you want a unique and impressive texture to your cookies, replace the butter with ghee and bake at around 425°F for 7-9 minutes. Ghee is pure butterfat. It has a richer flavor and higher smoke point. This method will leave your cookies both crispy and soft on the inside with an amazing flavor!
