Ingredients:
2 1/4 cups all-purpose flour (2 1/2 cups for high altitude)
1 tsp baking soda (3/4 tsp for high altitude)
1 tsp salt
1 cup unsalted butter, softened (or ghee)
1 1/2 cup packed brown sugar (1 1/3 cups for high altitude)
1 tsp vanilla extract
2 large eggs
2 cups semi-sweet chocolate chips
(add 2 tsp water for high altitude)
Instructions:
Preheat your oven to 375°F (190°C).
In a small bowl, combine the flour, baking soda, and salt.
Next add the softened butter, brown sugar, eggs, and vanilla extract. Mix until creamy.
Stir in the chocolate chips.
Drop rounded tablespoons of dough onto un-greased baking sheets or parchment paper.
Bake in the preheated oven for 8-10 minutes until the edges are golden brown.
Cool on the baking sheets for 2 minutes, then transfer to wire racks to cool completely.
Tips for High-Altitude Baking:
At higher altitudes, lower air pressure and drier air can affect baking. Adjustments are necessary to achieve the perfect bake.
Increase oven temperature and/or baking time to ensure thorough baking.
Decrease leavening agents like baking soda to prevent over-puffing.
Add a bit more flour to help with structure.
Another helpful tip:
If you want a unique and impressive texture to your cookies, replace the butter with ghee and bake at around 425°F for 7-9 minutes. Ghee is pure butterfat. It has a richer flavor and higher smoke point. This method will leave your cookies both crispy and soft on the inside with an amazing flavor!
